Hi, I’m the Bacon behind Bacon Loves Carrot. I am a midwestern meat eater through and through. I love steak, bacon, pork, and chicken like nobody’s business. In 2010, I met a boy in a bar wearing sunglasses at night, inside. Within the first 5 minutes, it came up that said this boy was also a vegetarian. Not only is he a vegetarian which, I have, to be honest, was hard to swallow but he’s a Lacto-vegetarian. If you aren’t hip on your vegetarian terms, that just means that alongside all meat products, he doesn’t eat eggs either. I know…the horror! Well, this boy immediately won my heart and has been my Carrot ever since.

I have always thought of food as love. Hell, if I like you, I bake you something. Seriously. So, I was in hot pursuit of foods that I could cook for my new Carrot and still eat myself. Up until that time, I was never a fake meat or tofu eater…ever. Remember, I’m from the midwest! But I really wanted to find a way to make meals that we both would love. So I googled all kinds of vegetarian ideas and what I found was lots of healthy foods or weird dishes and what I wanted was fried chicken and ribs. This is how my recipes started. I just started trying meat substitutes, learned how to bake my favorite treats without eggs, and even learned how to love tofu. Sometimes.

To complicate matters, I am a picky eater. Yes, I admit it. I am one of those weird people who doesn’t like their food to touch on the plate or won’t eat something just because it looks weird. So, these recipes are really people pleasers. I make them for my whole extended family and even my sons. Now, some they won’t touch with a 10 ft pole but most they love. And the ones they do, I make sure to mention it in the recipe because I bet your kids will love them too.

These recipes are also great if you have an egg allergy since many are eggless! With food allergies on the rise, I know these are recipes that could really help out some families out there.
