There is a whole lotta banana bread getting baked at my house. It’s because the kid is obsessed with bananas but will not eat them once that first brown spot appears. So, we buy a ton but chances are that every couple weeks, we will have a few bananas that are slightly past their prime according to the picky eater.

Well, if you have spare bananas hanging out on the counter like me, then you will love this super easy banana bread recipe. And since the carrot also doesn’t eat eggs, this is an egg free recipe. So, if you want banana bread but realize that you have no eggs or have someone in your house who refuses to eat the delicious little shelled treats or has an allergy. Then this is the ticket.

I didn’t add any nuts to the recipe either, mostly because I didn’t have nuts that day or often find myself nutless. But if you are a lover of the nuts, you can easily add them to this recipe.

So grab those brown bananas (the browner the better) and get to baking. This bread not only tastes amazing but will make your entire house smell like a slice of heaven.

This banana bread is chock full of super banana flavor. It comes together super easy and it is totally eggless.

Instructions

  1. With butter, grease the inside of a loaf pan and then sprinkle with flour. Pour batter into loaf pan.
  2. Sift flour, baking soda, egg replacer together.
  3. Using a standing or hand mixer, mash bananas on medium speed.
  4. Add sour cream, butter, brown sugar, and vanilla.
  5. Add the dry ingredients and just mix until combined.
  6. Bake for 60-70 minutes. Test with a toothpick for doneness.
