Oh yes, bananas are delicious on their own, but you bake them into a sweet treat with a crumb topping and it’s the best. These are the best banana muffins I’ve tried, if I do say so myself. They always make mornings better, because who doesn’t love a morning muffin?

As I mentioned in my post about my Banana Bread Recipe, we have a lot of old bananas in my house due to picky eaters. This works out great for me since bananas are naturally great binders in place of eggs. This can be tricky. If you do decide to use bananas to replace eggs in baking, you have to accept that whatever you are baking will have a banana flavor. This is great when you are making the banana bread or the best banana muffins (which these are), but it can be a challenge if you hate bananas.

Now, banana muffins are pretty darn good, but crumb topped banana muffins are unbelievable. We are a family of sweet tooths. So the added sugar on top of this delicious muffins just makes these irresistible. This recipe comes together very simply and quick, They are perfect for a Sunday brunch and travel well. Just ask my coworkers who are often treated to the extras from my Sunday morning batch.

I’m pretty sure that banana muffins are my favorite muffins, followed closely by blueberry. Test these out on your picky eaters, I bet there is not a crumb left behind.

  1. Remove the muffin pan from the oven and top each muffin with the uncooked crumb topping, Place pan back in the oven and bake for 12-15min. longer. Insert a toothpick to test doneness.
  2. In a standing mixer or with a wooden spoon, mash bananas.
  3. Add softened butter, vanilla, and brown sugar. Mix til combined.
  4. In a separate bowl, sift together flour, cinnamon, baking soda, and baking powder.
  5. Add dry ingredients to the wet and mix til combined.
  6. In a small bowl, mix: 3/4 cup Flour 3/4 cup Brown Sugar 1/4 t CinnamonCut in with two knives or a pastry cutter, 1/4 cup cold butter until it is a crumbly consistency.
  7. Take the batter and fill liners in a muffin pan 1/4 way. Bake at 375º for 5 minutes.
